Bacon Crostini

Ingredients
12 paper thin slices Schaller & Weber Double Smoked Bacon
2 ripe seasonal stone fruits or orchard fruits, pitted and thinly sliced
1/3 cup booze, such as white wine, bourbon or rye whiskey
12 baguette slices, sliced on a bias about 1/4 inch thick
Directions
- In a small bowl, add sliced fruit and booze and allow to macerate until fruit is soft, but not mushy, about 10 minutes.
- Meanwhile, toast the baguette slices. Either spread baguette slices on a sheet tray and place in hot oven or under broiler; or grill them dry, on a hot grill or grill pan until light golden brown.
- To serve, arrange about 3 slices of the drained macerated fruit on each toasted baguette slice. Lay or ribbon a paper thin shaving of bacon on top of fruit.
- EAT & ENJOY!!!
- Yield: 4 servings
- ADDITIONAL TIP:
- Try adding a fresh herb to the maceration of fruit and booze, such as a sprig or two of thyme, tarragon or rosemary. Finish the crostini with the fresh herb leaf of choice, to hint the flavor is infused.
