Chocolate Bacon Lollipop

If we started counting all the ways we love bacon we'd be here for a lifetime. Let's try this recipes from Claire Robison instead. Recipe for Schaller & Weber Courtesy of Claire Robinson, 2017

Ingredients

12 1/3 inch thick slices & about 4 inches long, Schaller & Weber Double Smoked Bacon
12 wooden lollipop sticks
1 pound chocolate melts
Directions

  • Preheat oven 400 degrees.
  • Arrange bacon evenly on rimmed sheet tray and bake 7 to 10 minutes, or until desired crispiness. Once bacon is cooked, set aside and allow bacon strips to cool enough to handle.
  • Place stick in bacon end, about 3/4th into bacon.
  • In a small glass bowl, melt chocolate in microwave or over a pot of simmering water. Dip the bacon on a stick into chocolate and shake once to remove excess. Lay chocolate dipped bacon on a piece of parchment paper allowing chocolate to set.
  • EAT & ENJOY!!!
  • Yield: 12 servings

    ADDITIONAL TIPS:

  • Store the bacon grease for a future flavor addition to a soup base. Method: While it's still in liquid form, but not hot just out of the oven, pour it into a glass jar and store in the refrigerator. The jar can be added to each time you cook more bacon.
  • Use chocolate melts over chocolate chips, as chips are less likely to melt and re-set well.
  • If you can’t find wooden lollipop sticks, no need to skip the recipe… just dip bacon half way into chocolate, allowing one exposed cooked bacon end to grab when eating.
  • If you are like me and too excited to eat these delicious treats and can’t wait for chocolate to set, put them in the refrigerator to set faster!
  • Wrap with a cello or parchment paper cut to size and tie a ribbon at the base of bacon, and around the lollipop stick to make these a gift or treat on the go!
