Loaded Mashed Potatoes

Loaded Mashed Potatoes

Bacon (and bacon fat) make these loaded mashed potatoes with scallions and sage. Make them tonight and you'll make everyone at the table happy.

 
 
Ingredients

1 lb. Schaller & Weber double smoked bacon
2 lb. Idaho potatoes
~3 tablespoons sea salt
1 medium onion
1tbsp butter.
4 scallion stalks
1 tablespoon fresh sage
Directions

  • Dice lardons from 1lb slab of Schaller & Weber double-smoked bacon and render over medium low heat until the bacon is golden brown and a few tablespoons of fat have been rendered.
  • Bring large pot of water to boil over the stove. Adding a generous amount of salt (2-3 tablespoons)
  • Dice large potatoes into quarters and add to boiling pot of water. Cook 10-12 minutes until you’re able to smoothly insert a fork. Remove potatoes from the water and drain.
  • Dice medium yellow onion and once the bacon fat is rendered, remove the bacon and set this aside on a paper towel. Add the butter to the bacon fat and turn the heat setting to low. Once the butter is melted into the bacon fat, add the onions. Cook the onions in the bacon fat and butter until they are wilted but not brown.
  • Dice 4 scallion stalks through to the green and set aside for topping.
  • Once the potatoes have been removed from the water, mash lightly with a potato masher or a large fork. Add melted bacon fat, butter, and onion mixture, ½ of the cooked bacon lardons, salt, and sage. Continue to mash to your preferred consistency.
  • Add scallions and more bacon on top.
  • EAT & ENJOY!!!
  • Yield: 4-6 servings
